After graduating from college, Geoffrey went to France, where he decided to pursue a career as a chef. His work as a professional chef was at Le Cirque, where he worked under chef Daniel Boulud. While working in Le Cirque, he was named Chef de Cuisine from 1982 to 1987.

Zakarian worked in various restaurants under many chefs at the beginning of his career. But in the Spring of 2001, he opened his own restaurant as Town in the East Side of Midtown Manhattan in the Chambers Hotel. In 2011, Geoffrey field a lawsuit citing personal bankruptcy when his employees filed a lawsuit against him. His employees suited him for gross violation of labor laws and claiming to payback. At that time, both of the partners of Geoffrey supported their workers, but Zakarian denied them all. Later the lawsuit was settled outside of the court.

After withdrawing from the restaurant The National in the Trump International Hotel Washington, D.C., in 2015, Trump sued Geoffrey for $10 million for lost rent and other damages. But after all these dramas, the suit was settled outside of the court in 2017.
